UPDATE from PREVIOUS POST:
I've concluded that iPod Agent is the freakin' man. It has a setting that allows you to sync your data (ratings and playcount) from the iPod back to the iTunes library. There's my answer. No data loss. No manual sync of your iPod library. Just like that. Now I can sleep peacefully.
